DRAGONWELL LUNG CHING GREEN LOOSE TEA: Lung Ching Tea, also known as Dragonwell, is produced by hand through a 10-part process. The side of West Lake in Zhejiang Province grows the tea used to produce Dragonwell. Dragonwell is distinguished by its beautiful shape, emerald color and sweet character. Legend has it that a Taoist monk affirmed that there's a dragon lurking in a spring. The monk implored the dragon to come to the rescue of the poor farmers suffering a crippling drought. Instantly, the clouds came rushing from every side and poured forth a timely rain. An old temple adjoining the spring is named Dragon's Well Monastery, and this tea derives its name from the same legend. HOT TEA: Put a slightly heaping tsp of loose tea for each 8oz of freshly boiled water. Steep 3-7 minutes. Milk and sugar are not recommended for this tea. ICED TEA: 6 slightly heaping tsp of loose tea for each 1QT iced tea. Pour 1 1/4 cup boiling water on tea. Steep 5 minutes. Quarter fill serving pitcher with cold water. Pour into pitcher straining tea. Add ice.
